How to pickle beets for the winter without sterilization - three simple but tasty recipes

Tell me how to pickle beets for the winter without sterilization? We have a dacha with a small vegetable garden, where we grow some vegetables, so to speak, "borscht set". But the problem is that there is nowhere to store the fruits. The summer cottage is not intended for winter living, just a summer house, without fundamental buildings in the form of a basement. We keep the potatoes in the apartment, on the insulated balcony, I try to preserve the rest of the vegetables and make mezzanine tins. Can I somehow roll up the beetroot, just to quickly and not sterilize?

If you want to save time and quickly make a vitamin salad in winter, try storing root vegetables for future use. There are some great ways to marinate beets for the winter without sterilizing. And thanks to the "acidic components" that are in the marinade, the beets will not "explode" and will safely reach the new harvest. Moreover, you can even preserve it whole by choosing small root vegetables, or cut it in portions and even grate it.

Beets can be pickled in several ways, depending on the purpose of further use:

  • for preparing salads, in particular vinaigrette;
  • whole (such vegetables can be eaten immediately after opening the jar or also cut for salads);
  • as a dressing for borscht with beans and onions.

For winter harvesting, use beet varieties Bordeaux, Detroit, Mulatto or Red ball. They have juicy sweet flesh and rich color.
