There are two ways to prepare such a blank: with and without sterilization. A snack made by the first method can be stored for a long time even in an apartment, in a warm room. Without heat treatment, cabbage is often made for consumption in the near future. In this case, it is stored in the refrigerator.

Chop 1 large carrot into a separate bowl, using a special grater, as for a Korean snack. Rub it with a little salt to let the juice flow. Now mix the cabbage with the carrots and add 3 cloves of finely chopped garlic. Having mixed the workpiece well, put it in jars.

Prepare a marinade at the rate of 0.5 liters of water 1 tbsp. l. salt and 2 times more sugar, as well as spices;

  • two lavrushkas;
  • 1 tsp. cumin and pepper (black peas);
  • 2 tsp coriander.

Boil for a couple of minutes, pour 150 ml of vinegar into the marinade and let it boil again. And immediately pour the cabbage and roll it up, without waiting for it to cool.

So that during the shredding process the cabbage does not stain your hands, it is better to work with gloves. Krasnokochanka juice eats into the skin very quickly and for a long time. But, if it did happen, you can "etch" it and clean your hands by wiping them with a slice of lemon.

sterilized cabbageOther vegetables, such as carrots, or even fruits and berries (plums, thorns) can also act as additional components of the snack. However, this classic recipe contains nothing but cabbage and spices. Seasonings will only add aroma and piquant taste to the cabbage.

A sterilized snack is prepared as follows:

  1. First of all, sterilize 3 empty half-liter jars separately.
  2. Then put 3-4 pieces in each jar. cloves and allspice peas. Add a couple of garlic cloves.
  3. Chop 1 kg of cabbage.
  4. Sprinkle it with salt and sugar, 30 g each and rub it with your hands.
  5. Arrange in containers.
  6. Pour boiling water over cabbage in jars and add 1-2 tbsp. l. apple cider vinegar in each.
  7. Sterilize for 15 minutes, then roll up and leave to cool under a blanket.

Usually sterilization is mandatory if the goal is to make preparations for the winter. Without this procedure, cabbage will not stand for a long time, especially in warmth.
