Soup "Karpaty" - a fragrant first course on weekdays and holidays
If you like mushrooms, be sure to prepare the Karpaty soup - a very tasty first course with a secret ingredient. Why secret? And the thing is that mushrooms are used for it not fresh, but pickled. They give the soup an original flavor by adding a slight sour note of mushroom marinade. And the correct serving, with the obligatory addition of sour cream and herbs, will complement the flavor range. You can eat such a dish at least every day, especially if you are a mushroom picker and harvest forest harvest. Then stocks of the main product will always be at your fingertips.
Ingredients
To cook 3-4 liters of hearty mushroom soup, we need:
- mushrooms pickled - 400 g;
- 3 large potatoes;
- 1 large carrot;
- 3 chicken thighs;
- rice (raw) - 50 g;
- vegetable oil for frying;
- seasonings (black peppercorns, lavrushka).
To serve with the soup, you will also need sour cream and dill.
Pickled mushrooms or boletus will give the soup a unique taste. But if there is no way to get them, ordinary mushrooms will do.
Carpathian soup: step by step preparation
First of all, we put a saucepan on the stove and cook the base of the soup - chicken broth. Do not forget to skim the meat, otherwise the broth will be cloudy.
While the meat is being cooked, we continue to prepare the soup:
- Peel the potatoes and cut them into small cubes.
- Peel the carrots, wash and cut into beautiful half rings.
- We put a frying pan on the next burner, pour oil. Fry the carrots.
- Pour mushrooms to the carrot. If they are very large, cut them in half. Fry for 10 minutes.
- When the broth boils, salt it right away, at this stage, throw in the black peppercorns. Cook for 15-20 minutes.
- Pour in the pre-washed rice. Cook it until half cooked for about 10 minutes.
- Add potatoes and mushrooms fried with carrots.
- At the end of cooking, throw in a couple of lavrushki.
The only thing left to do is to serve our Karpaty soup correctly. Pour it into plates, put on a tablespoon of sour cream and crush it with finely chopped fresh dill. Mushrooms combined with sour cream and herbs and tender chicken broth are the best first dish for a hearty dinner. Moreover, it is not a shame to serve it even on the festive table. Enjoy your meal!
