With its help, you can prepare a fragrant and tasty soup in a short time, without being distracted by shopping or the market in search of the necessary products.

What to make a blank for pickle?

The secret of the dressing is that it doesn't just consist of vegetables. Unlike classic recipes that can be used for any soup, boiled cereals are also added to the pickle dressing. In other words, this is almost a complete soup in canned form, only without liquid and potatoes.

Traditionally, pickle is prepared from pearl barley, so pearl barley will also be the basis of the workpiece. It must first be boiled until tender. For one serving of 14 half-liter jars, 500 g is enough.

To speed up the process of barley preparation, you can use a multicooker ("Porridge" mode).

In addition to barley, you will need to prepare the dressing:

  • onions and carrots (1 kg each);
  • oil, water and vinegar (0.5 tbsp each);
  • tomatoes - 1.5 kg;
  • salt - 2 tbsp. l .;
  • cucumbers - 3 kg (fresh);
  • sugar - 4 tbsp. l.

Overgrown cucumbers can also be used in harvesting by clearing them of seeds.

Step-by-step instructions for preparing pickle dressing

While the barley is boiling, you can do the vegetables, after washing and peeling them. Chop the onions, carrots and cucumbers into cubes. Chop the tomatoes with a blender until puree.

Now you can start preparing the seasoning:

  1. Pour the tomato mass into a large saucepan, add water and put on the stove to simmer.
  2. When the mass boils, add sugar and salt, add oil and put carrots. Simmer for 20 minutes.
  3. Add the onion and simmer for another 10 minutes.
  4. Last but not least, add cucumbers, bite and pearl barley at the same time. Cook for 30 minutes after boiling.
  5. Spread the finished dressing in sterilized jars and roll up.

The readiness of the dressing is determined by the vegetables - as soon as they settle to the bottom, they can be preserved.
