Under a glass of fortified drink, such a "company" will be a real find. Fruits marinated in spices and sugar syrup have an original taste. The only problem is that having tried them once, guests will forever give up the rest of the snacks.

For cooking, they take only enameled dishes: a saucepan and a bowl. Among other things, two half liter jars together with lids are pre-sterilized.

Thorough preparation

About 800 g of plums are carefully selected so that they do not have any damage or other defects. You need to take 200 g more than in the recipe, because after scalding some of them may burst. Put fruits in a bowl and add to them:

  • 6 to 10 bay leaves;
  • the same amount of black peppercorns and allspice with it;
  • cloves - up to 8 pcs;
  • two stars of anise.

The dishes with food are set aside and the syrup is prepared. In a saucepan, bring 500 ml of water to a boil. Then pour 300 g of sugar. The sweet syrup should boil in this composition for 7 minutes. Next, pour 8 tbsp. l. apple cider vinegar. Another will not work. Mix everything thoroughly. After the unique brine has boiled for seven minutes, add 4 tbsp. l. any cognac.

The calculation is as follows: for 1 jar of ready-made snack bars, 4 tablespoons of acid are needed.

Repetition is the mother of learning

Now they do the procedure, which will need to be repeated three times. Pour boiling syrup plums... Cover the bowl with a tight lid and wrap it in a towel. An hour later, the liquid is poured back into the pan and put on the fire, after which the sweet pickle is sent back to the fruit. As a result, you should get three such runs.

For the last time, drain the scarlet infused compote, and bring it to a boil. In the meantime, plums are packaged in banks, and then poured. The spices are left in a bowl. In this case, the fruits should be viewed so that they are not burst. Then this appetizer will delight even sophisticated sommeliers.
