  • when breaking, the bone is removed.

For the convenience of processing, use a coarse grater. The resulting pulp should let in enough juice. After that, about 800 g of sugar is poured into the pan. In order for the refined sugar to completely dissolve in a dense mass, it is worth stirring it from time to time. Then it will not be sugared, but will acquire the desired consistency.

The settled mixture resembles thick borscht. If it is too stringy, then cooks advise to dilute it with water. Maximum amount of liquid per kg peaches - ½ glass. Now add 2-3 tablespoons of lemon juice to the pulp.

Place the saucepan over medium heat. They wait until the brew boils, then screw it to the minimum temperature.

It is important to stir the contents constantly, because jam tends to stick to the bottom. It also gurgles a lot, so there may be splashes.

How to check if the jam is ready? Of the many techniques, one should be preferred. The dish is placed in the refrigerator. When it has cooled down, a small amount of hot jam is poured over it. Draw a strip in the middle with your finger. If its edges do not converge after that, it means that the mass has reached the desired condition. The boiling mixture is poured into sterilized jars and immediately closed. Then they are turned upside down. The cooled container is sent to the pantry.
