The sour taste of sweet jam lifts up to the seventh heaven. It is absolutely not difficult to prepare such an outstanding masterpiece.

Lemon-strawberry duo

Kilogram strawberry peeled off the tails and gently washed. Next, it should dry thoroughly. Following this, the berries are crushed using a submersible blender. They do not interrupt the whole mass, but only part of it. Small pieces blend harmoniously with delicate jelly.

For lemons (1.2 kg), the top and bottom are cut off. The largest fruit is laid aside, so that later it can be cut into "patches". The rest of the citrus fruits are passed through a meat grinder. The peel is not removed. Fall asleep with half of the declared sugar. Lay the sliced ​​lemon rings on top of the pulp. The second part of the refined sugar is sent to the strawberry mass.

The fruit should have a lot of juice, so they are left on the table for about 2 hours.

The main stages of heat treatment

The first step is to bring the lemon pulp to a boil so that in the end it becomes transparent. Remove from heat after 5 minutes. The same procedure is carried out with strawberry puree. It should only be boiled for only 3 minutes. During this period, the sugar should be dispersed.

The foam is removed without fail. Then the consistency of the product will be as clean as possible, without turbidity.

Pots with jams are removed from the stove. When the contents of each of them have cooled, it must be boiled again. The duration of the heat treatment remains the same. Now the containers are left for the "night watch".

Turning into candy

After 12 hours, the lemon mixture will become slightly transparent, and the strawberry mixture will be slightly viscous and thick. Now, in turn, put the containers on the fire. When the contents of both pots have boiled, pour a bag of pectin into them. Leave in this state for another 3 minutes, stirring constantly. Next comes the "filling" of an unusual delicacy:

  • 1/3 of the cans are filled with lemon suspension;
  • as soon as it acquires a jelly-like texture, one "patch" of citrus is placed in each of them;
  • the rest of the jar is filled with strawberry jam;
  • tightly tighten the container;
  • sent to a pot of water, where they should boil for 10 minutes.

Thanks to this processing, the jam will look like marmalade. In winter, everyone will want to enjoy a tender piece of jam. The aroma of strawberries and citrus will remind many of summer days or a seaside resort. Moreover, in cool weather, the sparkling ruby-colored jar will become a luxurious decoration for the table.
