We clean it from blades of grass, needles and other plant debris. We prune where necessary, for example, cutting off the tip of the leg with the ground. We change the water several times, because the mushrooms must be absolutely clean and beautiful.

Now the mushrooms must be boiled. If there are many of them, but there is no large container, you can do it in several passes. But it will be much more convenient to boil all the mushrooms in one go, borrowing a large saucepan or cauldron from a neighbor. We send mushrooms into it and fill them with cold water to completely cover. You don't need to pour a lot, about 2 liters is enough. Mushrooms have their own moisture, which they will begin to release during cooking. And if there is still little water, you can always top up.

In the process of cooking, be sure to collect the foam.

We cook our butter for at least 50 minutes, salt the water to taste. After this time, we take out and filter the mushrooms. No need to rinse.

Marinating mushrooms: how to make a marinade
