General storage rules

Before long-term storage in the cellar, root crops cannot be washed from the ground, otherwise they will absorb moisture and begin to rot quickly.

For long-term storage, only those roots are suitable that have not been affected by fungal or viral diseases, and also do not have signs of external damage.

Storage in plastic bags

Before storing beets in the refrigerator, they must be washed twice. The first time in plain tap water, the second - in warm water with the addition of baking soda (1 tablespoon per 10 liters of water). After washing the beets well, cut off the main root and tops along with 5-7 mm of pulp. After that, you need to allow the slices to air dry, leaving the roots to lie on the table for an hour. Then the beets are packed in plastic bags and, releasing as much air as possible from the bag, they are tied tightly.

You can use a juice straw by inserting it into a bag of vegetables and drawing out all the air through the straw. The result is vacuum packaging!

For greater tightness, the beets are packed in two bags, laying the first knot down. The bags are put into the refrigerator. So beets can be stored throughout the winter season. The main secret of this method is that the roots do not come into contact with air and therefore do not disappear.

Root vegetables can be frozen in the freezer by cutting them into cubes and placing them in plastic bags or plastic containers. Beets can be stored like this for a whole year until the next harvest.

Arrange small portions of the beets in bags so it will be more convenient for you to get them out of the freezer.

In this way, you can store any root vegetables except potatoes, since after freezing it acquires a sweetish taste.
