  3. Heat treatment. In this state, the dogwood jam is put on a slow fire, stirring constantly and periodically skimming the foam. The process takes up to 15 minutes.

In order for the jam to acquire a viscous consistency, as well as to become a more saturated shade, it is sent to infuse for 6-8 hours. It is advisable to cover the pan with a lid, leaving a small gap on the side. After the expiration date, the mixture is boiled over low heat for about 30 minutes, removing the foam. After that, the jam is poured into the jars, having previously sterilized them, and rolled up.

Those who want a thicker treat should increase the sugar portion to 1.5 kg. Then the liquid in its structure will resemble jelly and will turn out to be much sweeter.

Recipe variations

Busy women will love the recipe in which all the ingredients are mixed in the following dosage: 1.3 kg of sugar, 1 kg of berries and 50 ml of water. Put the container on gas, bring to a boil and turn it off. The procedure is repeated 5 more times, but only after the berry mass has cooled down.

Among other things, dogwood jam is prepared without seeds. To do this, the fruits are ground through a sieve. Before that, they are blanched. Further cooking follows a completely different scheme. First, the mixture is wrapped in gauze, then immersed in boiling water, and then dipped in cold water. The procedure is repeated 3 times. The syrup is prepared from 1.5 kg of sugar and 0.5 ml of water. Then it is poured into the pulp and cooked until tender. At the end, 3 g of citric acid are added.
