Apple and cherry compote for the winter without sterilization

compote for the winterBut with the preparation of compote for the winter you need to tinker a little, although there is nothing complicated here either. Cherries for rolling compote should be well-ripe, but not soft, but apples, on the contrary, are a little greenish. They will add the necessary sour accent and will not fall apart during the cooking process.

Cherries wash, dry (do not remove the bone), and cut out the part with seeds from apples. The peel is not removed from apples, because everyone knows that it is a storehouse of vitamins.

Pre-sterilize the jars, and boil the lids. Put apples and cherries in jars, filling slightly more than half of the container.

Pour boiling water over the jars, cover and leave for 20 minutes. After the specified time has elapsed, drain the water back into the pan. By the way, for this technique it is convenient to use a lid with holes - and the water will drain, and the berries will not fall out, and the hostess will not scald with hot water.

Add sugar to a pot of water, add a little water in reserve and put it on the fire again. The amount of sugar is equal to 1 glass for every liter of water that is drained from the can.

After the syrup boils and all the sugar is completely dissolved, immediately pour it into jars and roll it up.

Check the jars for leaks, turn them over, wrap them on top with something warm and leave to cool for a day.

Transfer the finished chilled compote to the cellar or basement for storage.

When opening jars of apple and cherry compote in winter, add water to it at a rate of 1: 1 before use. In order not to dilute the compote, when rolling, you can try to put less fruit in the jar.
