Jam from squash and zucchini "A la pineapple"

This kind of jam is often made only from zucchini. But everyone knows that the flesh of squash has a denser structure, due to which it retains its shape during the cooking process, unlike zucchini, which can fall apart. The combination of these two types of vegetables allows you to preserve the beautiful appearance of the jam, and the pieces of squash really crunch like pineapples.

What products do you need?

To make jam, you need to take:

  • 1 kg of squash;
  • 350 ml pineapple juice;
  • ¼ part of lemon;
  • 100 g sugar;
  • 150 ml of water (if necessary).

If you don't have lemon on hand, regular citric acid can replace it.

Preparing vegetables

No matter what degree of maturity you are squash with zucchini, it is better to peel them. This will make the jam the same color. Wash vegetables before cleaning.

Cut the peeled zucchini into thick circles and remove the core with a glass to make a ring. Just chop the squash in medium pieces.

Select seeds from lemon and cut into cubes.

How to make jam?

To boil chopped vegetables, you need to make a syrup from juice and sugar. When it boils, add lemon and squash cubes.

After boiling the squash, put the zucchini ring and mix. During the cooking process, the vegetables will start up juice, and the necessary liquid will appear.

If there is not enough juice, you can add a little water to the workpiece.

Boil the jam for 15 minutes, then turn off the burner and let it brew for 5 hours. After the specified time has elapsed, bring the workpiece to a boil again, turn the heat on and simmer for another 15 minutes. Put the finished jam in pasteurized jars and seal. Put the jars on the lid, cover with a towel and let them cool completely.

This dessert not only resembles pineapples in jars, but also gives off the aroma of this exotic fruit.
