Compote seaming process

Cut the pumpkin into medium cubes and transfer to a deep saucepan. Add sugar, grated zest and freshly squeezed lemon juice. Thanks to the lemon, the pumpkin cubes will retain their shape and will not fall apart during cooking. In addition, it will give compote the necessary acidity, which the pumpkin itself does not have.

Recommendation! Instead of lemon, you can put vinegar essence (1 tsp).

Pour pumpkin over with water to cover, bring to a boil and simmer over medium heat for 20 minutes. The readiness of the pumpkin can be determined by its appearance - it will become transparent.

Spread the boiled pumpkin along with the liquid in sterilized jars, add cloves or a cinnamon stick to each pair (whoever likes it). Roll up, wrap the jars and let them cool completely.
