In order to bring the currants to readiness, it will need to be boiled, but not just in water, but in sugar syrup. For him you will need:

  • granulated sugar - 1.2 kg;
  • purified water - 300 g (1.5 tbsp.).

This amount of syrup is calculated per kilogram of berries. If there are more of them, the proportions must be increased accordingly.

Candied fruits can be made from any currant, but more vitamins are contained in black berries.

Cooking process step by step

First you need to make a syrup: pour sugar into water, bring to a boil and boil for 1-2 minutes until the sugar has completely melted. Strain.

Now you can tackle the berries:

  1. Pour the currants peeled from the tails and washed into a saucepan.
  2. Cover with hot syrup.
  3. Boil for five minutes.
  4. Leave overnight to infuse the berries.
  5. The next day, cook the currants until tender and drain in a colander to drain all the syrup. Leave in this state for two hours.
  6. When the berries have cooled, gently put them on a baking sheet or serving with a spoon, after sprinkling sugar over it.
  7. Now it remains to wait until the candied fruits are completely dry. This will take at least 5 days.
  8. Prepared candied fruits generously roll in powdered sugar. You can do this with each small dried berry, or you can form small balls out of them.

To speed up the procedure, an oven is used to dry the candied fruit, which will reduce the time from 5 days to 3 hours. In this case, the temperature should be set to no more than 40 degrees.

It is necessary to store such a dessert in glass containers, tightly closed with a lid so that they do not become damp.
